Ingredients:

200g lean beef mince
1 large parsnip, peeled and diced into small cubes
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried thyme leaves
1 teaspoon smoked paprika powder
½ teaspoon ground black pepper
½ teaspoon sea salt
2 cups vegetable broth or stock

Cooking Instructions:

Heat a large pot over medium heat. Add the beef mince and cook until browned.
Add the onion and garlic to the pot and cook for 3-4 minutes until softened.
Add the parsnip cubes to the pot along with the thyme leaves, smoked paprika powder, black pepper and sea salt. Stir to combine all of the ingredients together.
Pour in the vegetable broth or stock and bring to a boil. Reduce heat to low and simmer for 30 minutes or until the parsnips are tender.
