Ingredients:

2 slices of your favorite bread
2 tablespoons of butter, melted
1/4 cup of balsamic
glazed onions (see recipe below)
2 ounces of goat cheese, crumbled Balsamic
Glazed Onions Recipe:
1 tablespoon of olive oil
1 large onion, thinly sliced
2 tablespoons of balsamic vinegar
1 teaspoon of sugar

Cooking Instructions:

To make the balsamic-glazed onions, heat the olive oil in a large skillet over medium heat. Add the onion slices and cook until softened and lightly browned, about 5 minutes. Add the balsamic vinegar and sugar and cook for an additional 3 minutes until the onions are glazed. Set aside.
Heat a large skillet over medium heat. Spread one side of each slice of bread with melted butter. Place one slice in the skillet butter side down and top with half of the goat cheese and all of the balsamic-glazed onions. Top with remaining goat cheese and then place remaining slice on top butter side up.
Cook for 4 to 5 minutes until golden brown on both sides and cheese is melted. Serve warm.
