Ingredients:

200g lean ground beef
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
½ teaspoon ground black pepper
2 cups cubed butternut squash (about 1 small squash)
1 cup vegetable broth or water

Cooking Instructions:

Preheat oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef until browned. Drain off any excess fat.
Add the onion and garlic to the skillet and cook for 3-4 minutes until softened.
Add the oregano, basil, black pepper and butternut squash cubes to the skillet and stir to combine.
Pour in the vegetable broth or water and bring to a simmer. Simmer for 5 minutes until the squash is tender.
Transfer the mixture to an oven-safe baking dish and bake in preheated oven for 30 minutes until heated through and bubbly around the edges.
