Ingredients:

2 large eggs, hard boiled and chopped
2 slices of bacon, cooked and crumbled
2 tablespoons of mayonnaise
1 tablespoon of Dijon mustard
1 teaspoon of lemon juice
Salt and pepper to taste
2 slices of bread of your choice
1 handful of arugula leaves

Cooking Instructions:

In a medium bowl, combine the chopped eggs, crumbled bacon, mayonnaise, Dijon mustard and lemon juice. Mix until all ingredients are well combined.
Season with salt and pepper to taste.
Toast the bread slices in a toaster or on a skillet over medium heat until golden brown.
Spread the egg salad mixture onto one slice of toast and top with arugula leaves. Place the other slice of toast on top to make a sandwich.
Serve immediately or wrap in foil for later consumption.
