Ingredients:

1 beetroot, peeled and cut into cubes
1 pear, cored and cut into cubes
2 tablespoons of walnuts, chopped
2 tablespoons of olive oil
Salt and pepper to taste For the Honey Mustard Dressing:
2 tablespoons of honey
2 tablespoons of mustard
2 tablespoons of olive oil

Cooking Instructions:

Preheat oven to 375°F (190°C).
Place the beetroot cubes on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Roast in preheated oven for 25 minutes or until tender.
Meanwhile, place the pear cubes on another baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Roast in preheated oven for 15 minutes or until tender.
In a small bowl whisk together honey, mustard, olive oil until combined. Set aside.
In a large bowl combine roasted beets, pears, walnuts together until combined. Pour over honey mustard dressing and toss to coat evenly. Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
