Ingredients:

120ml warm water
1 teaspoon active dry yeast
1 teaspoon sugar
2 tablespoons olive oil
200g gluten free all
purpose flour
50g buckwheat flour
1 teaspoon salt

Cooking Instructions:

In a large bowl, combine the warm water, yeast and sugar. Stir until the yeast is dissolved and let sit for 5 minutes.
Add in the olive oil, gluten free all-purpose flour, buckwheat flour and salt. Mix until a dough forms. Knead the dough for 5 minutes until it is smooth and elastic.
Place the dough in a greased bowl and cover with a damp cloth or plastic wrap. Let rise in a warm place for 1 hour or until doubled in size.
Preheat oven to 375°F (190°C). Grease a baking sheet with olive oil or non-stick cooking spray.
Divide the dough into 8 equal pieces and shape each piece into an oval roll shape about 4 inches long by 2 inches wide (10 cm x 5 cm). Place on prepared baking sheet about 2 inches apart (5 cm). Bake for 20 minutes or until golden brown on top and bottom. 6
