Ingredients:

150g lean ground beef
1 small sweet potato, peeled and diced into small cubes
1/4 cup diced onion
1/4 cup diced bell pepper (any color)
1/2 teaspoon garlic powder
1/2 teaspoon paprika powder
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F (190°C).
In a medium skillet over medium heat, cook the ground beef until it is no longer pink. Drain off any excess fat.
Add the sweet potato cubes, onion, bell pepper, garlic powder, paprika powder, salt and pepper to the skillet with the beef. Cook for 5 minutes or until vegetables are tender.
Transfer the beef and vegetable mixture to an oven-safe dish. Bake in preheated oven for 25 minutes or until sweet potatoes are tender.
Serve hot with your favorite side dish or salad. Enjoy!
