Ingredients:

4 slices of bacon, diced
2 cups of Brussels sprouts, halved
1 apple, diced
2 tablespoons of olive oil
Salt and pepper to taste
2 tablespoons of maple syrup
1 tablespoon of dijon mustard

Cooking Instructions:

Preheat oven to 375°F.
Place the diced bacon on a baking sheet lined with parchment paper. Bake for 15 minutes or until crispy. Remove from oven and set aside.
In a large bowl, combine the halved Brussels sprouts, diced apple, olive oil, salt and pepper. Toss to combine. Spread the mixture onto a baking sheet lined with parchment paper. Bake for 10-15 minutes or until the Brussels sprouts are golden brown and tender. Remove from oven and set aside to cool slightly.
In a small bowl, whisk together the maple syrup and dijon mustard until combined. Set aside.
To assemble the salad, place the roasted Brussels sprouts mixture in a large bowl along with the cooked bacon pieces and maple dijon dressing. Toss to combine all ingredients together until evenly coated in dressing. Serve immediately or store in an airtight container in the refrigerator for up to 3 days. Enjoy!
