Ingredients:

50g gluten
free flour blend
1 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons butter, melted and cooled slightly
1/2 cup warm water (110°F)
2 tablespoons baking soda dissolved in 2 cups of hot water (190°F) for boiling the pretzels.

Cooking Instructions:

Preheat oven to 425°F.
In a medium bowl, whisk together the gluten-free flour blend, baking powder and salt.
Add the melted butter and warm water to the dry ingredients and mix until a soft dough forms.
Turn the dough out onto a lightly floured surface and knead for 3 minutes until smooth and elastic.
Divide the dough into 8 equal pieces and roll each piece into a rope about 12 inches long. Shape each rope into a pretzel shape by making three loops with one end of the rope going through the center loop of the other end of the rope.
Place pretzels in boiling baking soda solution for 30 seconds then remove with a slotted spoon or spatula to drain off excess liquid before transferring to a parchment lined baking sheet.
Bake for 12-15 minutes until golden brown then transfer to a wire rack to cool completely before serving or storing in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 5 days.
