Ingredients:

2 slices of whole wheat bread
2 tablespoons of olive oil
1 boneless skinless chicken breast, pounded to an even thickness
Salt and pepper to taste
2 tablespoons of peach chutney
1/4 cup of baby spinach leaves or other greens of your choice

Cooking Instructions:

Preheat a grill pan over medium heat. Brush the chicken breast with olive oil and season with salt and pepper. Place the chicken on the preheated grill pan and cook for 8 minutes per side or until cooked through. Remove from heat and set aside to rest for 5 minutes before slicing into strips.
Toast the bread slices in a toaster or on the grill pan until lightly golden brown. Spread one slice with peach chutney and top with sliced chicken strips, baby spinach leaves, and the other slice of toast. Serve immediately.
