Ingredients:

120ml of warm water
1 teaspoon of sugar
1 teaspoon of active dry yeast
250g of gluten
free flour blend (such as Bob’s Red Mill)
1 teaspoon of xanthan gum
1 teaspoon of salt

Cooking Instructions:

Preheat the oven to 375°F.
In a small bowl, combine the warm water and sugar and stir until the sugar is dissolved. Add the yeast and let it sit for 5 minutes until it is foamy.
In a large bowl, mix together the gluten-free flour blend, xanthan gum and salt. Make a well in the center and pour in the yeast mixture. Stir until it forms a dough.
Knead the dough for 5 minutes on a lightly floured surface until it is smooth and elastic. Form into a ball and place on a lightly greased baking sheet. Flatten into an 8 inch circle and cut into 8 wedges with a sharp knife or pizza cutter.
Bake for 20 minutes or until golden brown on top. Let cool before serving or storing in an airtight container for up to 3 days at room temperature or up to 2 weeks in the refrigerator.
