Ingredients:

2 slices of rye bread
4 ounces of corned beef, thinly sliced
1/4 cup of sauerkraut, drained and rinsed
2 tablespoons of Thousand Island dressing
1 tablespoon of butter, melted
1/4 teaspoon of smoked paprika

Cooking Instructions:

Preheat your smoker to 225°F.
Place the corned beef on the smoker grate and smoke for 1 hour.
Meanwhile, spread the butter on one side of each slice of bread. Sprinkle the smoked paprika over the butter.
After an hour, remove the corned beef from the smoker and assemble your sandwiches by layering the corned beef, sauerkraut and Thousand Island dressing on one slice of bread. Top with the other slice of bread, buttered side up.
Place the sandwiches on a baking sheet or in a cast iron skillet and return to the smoker for an additional hour or until golden brown and crispy on both sides.
Serve warm and enjoy!
