Ingredients:

2 slices of whole wheat bread
2 slices of bacon
1/2 avocado, sliced
2 tablespoons of herb mayo
1 tomato, sliced
1 lettuce leaf, shredded or torn into small pieces

Cooking Instructions:

Preheat a skillet over medium heat and cook the bacon until it is crispy. Set aside on a plate lined with paper towels to absorb the excess grease.
Toast the bread in a toaster or in the skillet over medium heat until golden brown.
Spread one tablespoon of herb mayo on each slice of toast and top with bacon slices, avocado slices, tomato slices and lettuce pieces.
Place the other slice of toast on top and press down lightly to make sure everything is held together nicely.
Cut in half and serve immediately while still warm!
