Ingredients:

120ml warm water
1 teaspoon sugar
1 teaspoon active dry yeast
150g gluten
free flour blend (such as Bob’s Red Mill)
1/2 teaspoon salt
2 tablespoons olive oil

Cooking Instructions:

In a small bowl, combine the warm water, sugar and yeast. Stir until the yeast is dissolved and let sit for 5 minutes until it starts to foam.
In a large bowl, whisk together the gluten-free flour blend and salt. Add in the olive oil and the yeast mixture and stir until a dough forms.
Turn out the dough onto a lightly floured surface and knead for 5 minutes until it is smooth and elastic.
Place the dough in a greased bowl, cover with plastic wrap or a damp towel and let rise in a warm place for 30 minutes or until doubled in size.
Preheat oven to 375°F (190°C). Grease an 8×8 inch baking pan with cooking spray or butter.
Punch down the dough and turn out onto a lightly floured surface again. Divide into 8 equal pieces and shape into balls by rolling between your hands until smooth on all sides. Place in prepared baking pan with enough space between each roll for them to expand while baking. Cover with plastic wrap or damp towel again and let rise for 15 minutes more before baking.
Bake rolls for 20 minutes or until golden brown on top and cooked through when tested with a toothpick inserted into center of roll comes out cleanly without any wet dough attached to it . Let cool slightly before serving warm or at room temperature . Enjoy!
