Ingredients:

2 slices of white bread
2 tablespoons of butter, melted
1/2 cup of sliced mushrooms
1/4 cup of shredded Swiss cheese
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F. Place the mushrooms on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Bake for 8-10 minutes until golden brown. Set aside.
Heat a large skillet over medium heat. Spread one side of each slice of bread with butter. Place one slice in the skillet, butter side down. Top with mushrooms and Swiss cheese then top with the other slice of bread, butter side up.
Cook for 3-4 minutes until golden brown then flip over and cook for an additional 3-4 minutes until golden brown and cheese is melted. Serve warm.
