Ingredients:

2 slices of sourdough bread
2 tablespoons of butter, melted
1/2 cup of fennel, thinly sliced
1/4 cup of asiago cheese, grated
Salt and pepper to taste

Cooking Instructions:

Heat a large skillet over medium heat. Add the fennel and sauté for 5 minutes until softened. Season with salt and pepper to taste. Remove from heat and set aside.
Spread the melted butter onto one side of each slice of bread. Place one slice butter side down onto the skillet over medium heat. Top with the sautéed fennel and grated asiago cheese. Place the other slice of bread on top, butter side up.
Grill for 3-4 minutes until golden brown and cheese is melted. Flip over and grill for an additional 3-4 minutes until golden brown on both sides.
