Ingredients:

1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
2 cups frozen peas
2 cups vegetable broth or water
1 teaspoon dried mint leaves or 1 tablespoon fresh mint leaves, chopped
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.
Add the frozen peas and vegetable broth or water to the pot. Bring to a boil then reduce heat to low and simmer for 15 minutes.
Remove from heat and stir in the mint leaves. Use an immersion blender to blend the soup until smooth. Alternatively you can transfer the soup to a blender or food processor to blend until smooth.
Season with salt and pepper to taste before serving.
