Ingredients:

1 head of broccoli (chopped)
1 onion (diced)
2 cloves garlic (minced)
2 tablespoons olive oil
2 cups vegetable broth
1/2 cup coconut milk or almond milk
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic and sauté for 3 minutes until softened.
Add the chopped broccoli to the pot and sauté for another 3 minutes until lightly browned.
Pour in the vegetable broth and bring to a boil. Reduce heat to low and simmer for 10 minutes until the broccoli is tender.
Remove from heat and let cool slightly before transferring to a blender or food processor. Blend until smooth and creamy.
Return the soup back to the pot over low heat and stir in the coconut milk or almond milk until combined. Season with salt and pepper to taste before serving warm.
