Ingredients:

60g dry pasta of your choice
1/4 cup canned crushed tomatoes
1/4 cup vegetable broth or water
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano leaves
1/4 teaspoon salt
2 tablespoons breadcrumbs or oats (optional)
2 tablespoons nutritional yeast (optional)
2 tablespoons ground flaxseed (optional)
1/4 cup cooked lentils or beans (optional)
2 tablespoons chopped fresh parsley (optional)

Cooking Instructions:

Bring a pot of salted water to a boil over high heat. Add the pasta and cook according to package instructions. Drain and set aside.
In a medium saucepan over medium heat, combine the crushed tomatoes, vegetable broth or water, garlic powder, oregano leaves, and salt. Simmer for 5 minutes until the sauce thickens slightly.
In a small bowl, mix together the breadcrumbs or oats (if using), nutritional yeast (if using), ground flaxseed (if using), cooked lentils or beans (if using), and chopped fresh parsley (if using). Form into small balls about the size of a golf ball and add to the tomato sauce. Simmer for 10 minutes until the meatballs are cooked through.
Add the cooked pasta to the saucepan with the meatballs and tomato sauce and stir to combine. Simmer for an additional 5 minutes until everything is heated through. Serve hot with freshly grated Parmesan cheese if desired.
