Ingredients:

1 cup cooked chicken, shredded or diced
2 cups vegetable broth
1/2 cup diced carrots
1/2 cup diced celery
1/4 cup diced onion
2 cloves garlic, minced
2 tablespoons all
purpose flour or gluten
free flour blend
1 teaspoon dried thyme leaves
1/2 teaspoon ground black pepper
2 tablespoons fresh parsley, chopped

Cooking Instructions:

In a large pot over medium heat, add the vegetable broth and bring to a boil.
Add the carrots, celery, onion and garlic to the pot and simmer for 5 minutes.
In a small bowl, whisk together the flour with the thyme and pepper until combined. Slowly add this mixture to the pot while stirring constantly until it thickens slightly.
Add the cooked chicken to the pot and simmer for 10 minutes.
To make the dumplings, in a medium bowl combine the flour with baking powder and salt until combined. Add in the cold water and yogurt until it forms a dough ball (add more water if needed). On a lightly floured surface roll out the dough into a thin sheet about ¼ inch thick then cut into small squares or circles using a knife or cookie cutter. Drop these pieces into the soup one at a time while stirring gently so they don’t stick together. Simmer for an additional 10 minutes until dumplings are cooked through.
Serve hot with fresh parsley on top if desired!
