Ingredients:

100g butter, softened
150g light brown sugar
1 egg, beaten
150g peanut butter
150g plain flour
1 teaspoon baking powder
50g walnuts, chopped

Cooking Instructions:

Preheat the oven to 180°C/350°F/Gas Mark
Grease two baking trays with butter or line with parchment paper.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg until combined.
Add the peanut butter and mix until combined.
Sift in the flour and baking powder and mix until a dough forms. Stir in the chopped walnuts.
Roll tablespoons of dough into balls and place on the prepared baking trays, leaving enough space between each cookie for them to spread during cooking. Flatten each cookie slightly with your hand or a fork before baking.
Bake for 12-15 minutes or until golden brown around the edges but still soft in the middle. Allow to cool on the tray for 5 minutes before transferring to a wire rack to cool completely before serving or storing in an airtight container for up to 5 days.
