Ingredients:

2 tablespoons of almond butter
2 tablespoons of coconut oil
2 tablespoons of granulated sweetener (e.g. monk fruit sweetener)
1 egg yolk
1/4 teaspoon of baking powder
1/4 teaspoon of vanilla extract
Pinch of salt

Cooking Instructions:

Preheat the oven to 350°F (175°C).
In a medium bowl, mix together the almond butter, coconut oil and sweetener until well combined.
Add the egg yolk and mix until fully incorporated.
Add the baking powder, vanilla extract and salt and mix until everything is well combined.
Line a baking sheet with parchment paper and scoop out tablespoon-sized balls of dough onto the sheet. Flatten each ball slightly with your fingers or a fork to form a cookie shape.
Bake for 8-10 minutes or until golden brown on top. Allow to cool before serving. Enjoy!
