Ingredients:

1 head of broccoli, chopped into small florets
2 tablespoons butter
1 onion, diced
2 cloves garlic, minced
2 cups vegetable broth or stock
1 cup heavy cream or half and half cream
Salt and pepper to taste

Cooking Instructions:

Heat the butter in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the broccoli florets and cook for another 5 minutes.
Pour in the vegetable broth or stock and bring to a boil. Reduce heat to low and simmer for 10 minutes or until the broccoli is tender.
Remove from heat and let cool slightly before transferring to a blender or food processor. Blend until smooth.
Return the soup back to the pot over low heat and stir in the cream or half & half cream until combined. Season with salt & pepper to taste before serving hot with your favorite toppings such as croutons or shredded cheese if desired.
