Ingredients:

1/2 cup cooked chicken, shredded or diced
1/4 cup diced onion
1/4 cup diced bell pepper (any color)
2 tablespoons olive oil
2 small flour tortillas
1/4 cup shredded cheese (any type)
Salt and pepper to taste

Cooking Instructions:

Heat the olive oil in a medium skillet over medium heat.
Add the onion and bell pepper to the skillet and cook until softened, about 5 minutes.
Add the chicken to the skillet and season with salt and pepper to taste. Cook until heated through, about 5 minutes more.
Place the tortillas on a plate and top each with half of the chicken mixture. Sprinkle each with half of the cheese.
Heat a large skillet over medium heat and place one of the tacos in it. Cook until lightly browned on both sides, about 3 minutes per side. Repeat with remaining taco.
Serve tacos warm with your favorite toppings such as salsa, sour cream, guacamole or lettuce and tomato if desired. Enjoy!
