Ingredients:

60g butter, softened
30g light brown sugar
1 egg yolk
1 teaspoon vanilla extract
90g all
purpose flour
½ teaspoon baking powder
¼ teaspoon salt
50g raisins

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, cream together the butter and brown sugar until light and fluffy. Beat in the egg yolk and vanilla extract until combined.
In a separate bowl, whisk together the flour, baking powder and salt. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Stir in the raisins until evenly distributed throughout the dough.
Using a tablespoon measure, scoop out balls of dough onto the prepared baking sheet about 2 inches apart from each other. Bake for 12-15 minutes or until golden brown around the edges. Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
