Ingredients:

60g of butter, cubed and chilled
2 tablespoons of white wine vinegar or white wine
1 tablespoon of freshly squeezed lemon juice
1 teaspoon of minced shallot or onion
Salt and pepper to taste

Cooking Instructions:

In a small saucepan over medium heat, add the white wine vinegar or white wine and shallot or onion. Simmer for about 5 minutes until the liquid has reduced by half.
Add the lemon juice and simmer for another minute.
Reduce the heat to low and add the cubed butter one piece at a time while whisking constantly until all the butter has been incorporated into the sauce.
Season with salt and pepper to taste.
Serve immediately over your favorite dish!
