Ingredients:

1 onion, diced
2 carrots, diced
2 celery stalks, diced
1 garlic clove, minced
2 bay leaves
1 teaspoon black peppercorns
2 liters of water

Cooking Instructions:

Preheat your sous vide water bath to 85°C (185°F).
Place all the ingredients in a large zip-top bag and seal it using the water displacement method.
Place the bag in the preheated water bath and cook for 2 hours.
Remove the bag from the water bath and strain the stock through a fine mesh strainer into a large bowl or container. Discard the solids.
Allow the stock to cool before transferring it to an airtight container and storing it in the refrigerator for up to 5 days or in the freezer for up to 3 months.
