Ingredients:

2 large onions, thinly sliced
2 cloves garlic, minced
1 teaspoon dried thyme leaves
1 teaspoon dried oregano leaves
4 cups vegetable broth or stock
2 tablespoons white wine or sherry (optional)
1 tablespoon balsamic vinegar
Salt and pepper to taste

Cooking Instructions:

Preheat oven to 375°F.
Place the sliced onions on a baking sheet lined with parchment paper and bake for 25 minutes until golden brown.
In a large pot over medium heat, add the garlic and cook for 1 minute until fragrant. Add the thyme and oregano and cook for an additional minute.
Add the vegetable broth or stock, white wine or sherry (if using), balsamic vinegar, salt and pepper to taste. Bring to a boil then reduce heat to low and simmer for 15 minutes.
Add the roasted onions to the pot and simmer for an additional 10 minutes until all of the flavors have combined together nicely. Taste and adjust seasoning if needed.
Serve hot with crusty bread or croutons if desired! Enjoy!
