Ingredients:

250g beef stew meat, cubed
1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
200ml red wine
500ml beef stock
1 bay leaf
1 teaspoon dried thyme
2 tablespoons tomato paste
Salt and pepper to taste
200g egg noodles

Cooking Instructions:

Preheat oven to 350°F (175°C).
In a large oven-safe pot or Dutch oven over medium heat, add the beef cubes and cook until browned on all sides. Remove from the pot and set aside.
Add the onion and garlic to the pot and cook until softened. Add the carrots and celery and cook for an additional 5 minutes.
Pour in the red wine and scrape up any browned bits from the bottom of the pot. Add the beef stock, bay leaf, thyme, tomato paste, salt and pepper to taste. Bring to a boil then reduce heat to low and simmer for 10 minutes.
Return the beef cubes to the pot along with any accumulated juices from resting them on a plate earlier. Cover with a lid or foil and place in preheated oven for 30 minutes or until beef is tender.
Meanwhile bring a large pot of salted water to a boil over high heat then add egg noodles and cook according to package instructions until al dente (about 8 minutes). Drain noodles then set aside until ready to serve.
Once beef is cooked through remove from oven then adjust seasoning if necessary before serving over cooked egg noodles with extra sauce spooned over top if desired. Enjoy!
