Ingredients:

1/2 cup diced onion
2 cloves garlic, minced
1/4 cup white wine or vegetable broth
2 cups vegetable broth or water
1/2 cup diced celery
1/2 teaspoon dried thyme leaves
1 bay leaf
2 tablespoons tomato paste
1/4 teaspoon ground black pepper
2 cups cooked lobster meat, chopped into small pieces

Cooking Instructions:

In a large pot over medium heat, sauté the onion and garlic in a small amount of water until softened.
Add the white wine or vegetable broth and bring to a simmer.
Add the vegetable broth or water, celery, thyme leaves, bay leaf, tomato paste and black pepper. Bring to a boil then reduce heat to low and simmer for 15 minutes.
Add the lobster meat and simmer for an additional 10 minutes until heated through.
Remove from heat and serve hot with crusty bread or crackers if desired.
