Ingredients:

2 tablespoons butter
2 leeks, white and light green parts only, thinly sliced
1 clove garlic, minced
2 tablespoons all
purpose flour
2 cups vegetable broth or chicken broth
1 cup heavy cream or half and half
Salt and pepper to taste

Cooking Instructions:

In a large pot over medium heat, melt the butter. Add the leeks and garlic and cook until softened, about 5 minutes.
Add the flour and stir until combined. Cook for 1 minute more.
Slowly add the broth while stirring constantly until combined. Bring to a boil then reduce heat to low and simmer for 10 minutes.
Add the cream or half and half and stir until combined. Simmer for 5 minutes more or until thickened slightly.
Season with salt and pepper to taste before serving hot with crusty bread or crackers if desired.
