Ingredients:

2 egg yolks
2 tablespoons of lemon juice or white wine vinegar
1 teaspoon of Dijon mustard
½ teaspoon of salt
250 ml of vegetable oil or sunflower oil

Cooking Instructions:

In a medium bowl, whisk together the egg yolks, lemon juice or white wine vinegar, Dijon mustard and salt until combined.
Slowly add the oil in a thin stream while whisking continuously until all the oil is incorporated and the mixture is thick and creamy.
Taste and adjust seasoning if necessary.
Transfer to an airtight container and store in the refrigerator for up to one week.
