Ingredients:

120g all
purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
115g butter, softened to room temperature
100g light brown sugar, packed
50g granulated sugar
1 large egg
2 teaspoons vanilla extract
120g rolled oats
80g chopped plums

Cooking Instructions:

Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats. Set aside.
In a medium bowl, whisk together the flour, baking powder, baking soda and salt. Set aside.
In a large bowl using a hand mixer or stand mixer fitted with a paddle attachment, beat the butter for 1 minute on medium speed until completely smooth and creamy. Add the brown sugar and granulated sugar and beat on medium speed until fluffy and light in color. Beat in egg and vanilla extract on high speed until combined.
Add dry ingredients to wet ingredients and mix on low until combined. With a rubber spatula or wooden spoon, fold in oats and plums until combined.
Using a cookie scoop or spoon, scoop cookie dough onto prepared baking sheets about 2 inches apart from each other (12 cookies per sheet). Bake for 12-15 minutes or until edges are lightly golden browned but centers are still soft (cookies will look slightly undone). Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely before serving. Enjoy!
