Ingredients:

100g of all
purpose flour
50g of butter, softened
30ml of almond milk
1 teaspoon of baking powder
½ teaspoon of ground cinnamon
¼ teaspoon of salt
60g of dried apricots, chopped into small pieces

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a baking sheet with butter or cooking spray.
In a medium bowl, mix together the flour, baking powder, cinnamon and salt.
In a separate bowl, cream together the butter and almond milk until light and fluffy.
Add the dry ingredients to the wet ingredients and mix until combined.
Fold in the chopped apricots until evenly distributed throughout the dough.
Roll out the dough on a lightly floured surface to about ¼ inch thick and cut out desired shapes with cookie cutters or a knife. Place on prepared baking sheet about 1 inch apart from each other.
Bake for 12-15 minutes or until golden brown around the edges and lightly browned on top. Allow to cool before serving.
