Ingredients:

1 large potato, peeled and diced into small cubes
1/2 cup diced onion
1/2 cup diced bell pepper (any color)
2 tablespoons olive oil
Salt and pepper to taste
1 large egg
2 tablespoons grated cheese (optional)

Cooking Instructions:

Preheat oven to 375°F.
In a medium bowl, combine the potatoes, onion, bell pepper, olive oil, salt and pepper. Mix until all ingredients are evenly coated with the oil.
Spread the mixture onto a baking sheet lined with parchment paper or aluminum foil. Bake for 20 minutes or until potatoes are golden brown and crispy.
Remove from oven and create a nest in the center of the potatoes by pushing them together with a spoon or spatula. Crack an egg into the center of the nest and sprinkle with cheese if desired.
Return to oven for 5-7 minutes or until egg is cooked to your desired doneness.
