Ingredients:

1 cup gluten free all
purpose flour
1 cup whole wheat flour
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
2 tablespoons coconut oil (melted)
1 cup almond milk (or other non
dairy milk)
¼ cup honey or maple syrup
1 teaspoon vanilla extract
½ cup fresh blueberries

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with coconut oil.
In a large bowl, whisk together the gluten free all-purpose flour, whole wheat flour, baking powder, baking soda and salt. Set aside.
In a medium bowl, whisk together the melted coconut oil, almond milk (or other non-dairy milk), honey or maple syrup and vanilla extract until combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries. Do not overmix!
Pour the batter into the prepared loaf pan and bake for 40-45 minutes or until a toothpick inserted into the center comes out clean. Let cool for 10 minutes before slicing and serving. Enjoy!
