Ingredients:

1 cup of vegetable broth
1/2 cup of diced carrots
1/2 cup of diced celery
1/4 cup of diced onion
1/4 cup of diced bell pepper
2 cloves of garlic, minced
2 tablespoons of olive oil
Salt and pepper to taste

Cooking Instructions:

Preheat your sous vide water bath to 185°F (85°C).
In a medium bowl, combine the vegetable broth, carrots, celery, onion, bell pepper and garlic.
Place the mixture into a sous vide bag and seal it tightly.
Place the bag into the preheated water bath and cook for 30 minutes.
Remove the bag from the water bath and carefully open it up.
Heat the olive oil in a large pot over medium heat. Add the contents of the sous vide bag to the pot and stir to combine. Simmer for 5 minutes or until vegetables are tender.
Season with salt and pepper to taste before serving hot.
