Ingredients:

60g butter, softened
30g granulated sugar substitute (e.g. Splenda)
1 egg yolk
1 teaspoon vanilla extract
90g all
purpose flour
1/2 teaspoon baking powder
Pinch of salt
40g white chocolate chips

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
In a medium bowl, cream together butter and sugar substitute until light and fluffy. Beat in egg yolk and vanilla extract until combined.
In a separate bowl, whisk together flour, baking powder and salt. Gradually add dry ingredients to wet ingredients and mix until just combined. Fold in white chocolate chips.
Scoop dough onto prepared baking sheet using a tablespoon measure or cookie scoop and flatten slightly with your fingers or the back of a spoon. Bake for 8-10 minutes or until edges are lightly golden brown. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
