Ingredients:

1/4 cup (60 ml) of butter, softened
1/4 cup (60 ml) of brown sugar substitute
1/2 teaspoon (2.5 ml) of vanilla extract
1 egg white
1/2 cup (120 ml) of all
purpose flour
1/2 teaspoon (2.5 ml) of baking powder
1/4 teaspoon (1.25 ml) of salt
3/4 cup (180 ml) of rolled oats
1/3 cup (80 ml) of chopped walnuts

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and set aside.
In a medium bowl, cream together the butter and brown sugar substitute until light and fluffy. Beat in the vanilla extract and egg white until combined.
In a separate bowl, whisk together the flour, baking powder and salt until combined. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Stir in the oats and walnuts until evenly distributed throughout the dough.
Using a tablespoon measure, scoop out small portions of dough onto the prepared baking sheet about 2 inches apart from each other. Bake for 12-15 minutes or until golden brown around the edges and lightly golden on top. Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely before serving.
