Ingredients:

25g butter, softened
25g light brown sugar
1 egg yolk
50ml molasses or honey
75g plain flour
1 teaspoon ground ginger
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg

Cooking Instructions:

Preheat the oven to 180°C/350°F/Gas Mark
Grease a baking tray with butter or oil.
In a bowl, cream together the butter and sugar until light and fluffy. Beat in the egg yolk and molasses or honey until combined.
In a separate bowl, sift together the flour, ginger, cinnamon and nutmeg. Gradually add this to the wet ingredients and mix until a dough forms.
Roll out the dough on a lightly floured surface to about 5mm thick and cut out shapes using cookie cutters of your choice (or just use your hands to make small balls). Place on the prepared baking tray and bake for 15-20 minutes until golden brown. Allow to cool before serving.
