Ingredients:

2 medium potatoes (peeled and diced)
2 tablespoons olive oil
1/2 cup diced ham
1/4 cup shredded cheese
1/4 cup diced vegetables (such as bell peppers or onions)
1 teaspoon dried herbs (such as oregano or thyme)
2 eggs

Cooking Instructions:

Preheat oven to 375°F.
In a large bowl, combine potatoes with olive oil and mix until evenly coated. Spread the potatoes onto a baking sheet lined with parchment paper. Bake for 15 minutes or until golden brown and crispy.
Remove from oven and top with ham, cheese, vegetables and herbs. Make two small wells in the center of the potato mixture for the eggs. Crack one egg into each well.
Return to oven and bake for an additional 10 minutes or until eggs are cooked through.
