Ingredients:

2 cups gluten free all
purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 tablespoons honey or maple syrup
1 cup almond milk or other non
dairy milk of choice
2 tablespoons olive oil or melted coconut oil

Cooking Instructions:

Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray or butter.
In a large bowl, whisk together the gluten free flour, baking powder, baking soda and salt.
In a separate bowl, mix together the honey or maple syrup, almond milk and olive oil or melted coconut oil until combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
Divide the batter evenly among the 12 muffin cups and bake for 15 minutes or until golden brown on top and a toothpick inserted into the center comes out clean.
Let cool for 5 minutes before removing from the tin and serving warm with butter or your favorite topping!
