Ingredients:

2 medium sweet potatoes (peeled and diced)
2 tablespoons olive oil
1/2 cup diced ham
1/2 cup shredded cheese (cheddar or mozzarella)
1/4 cup diced bell peppers or other vegetables of your choice
1 teaspoon dried herbs (oregano or basil)
2 tablespoons salsa
2 eggs

Cooking Instructions:

Preheat the oven to 375°F.
In a large bowl combine the sweet potatoes with the olive oil and mix until evenly coated. Spread the sweet potatoes on a baking sheet lined with parchment paper. Bake for 15 minutes until golden brown.
Remove from the oven and add the ham, cheese, bell peppers or other vegetables of your choice and herbs to the baking sheet. Mix everything together until evenly distributed. Make two small nests in the mixture for each egg. Crack an egg into each nest and top with salsa. Bake for 10 more minutes until eggs are cooked through.
Serve warm with additional salsa if desired. Enjoy!
