Ingredients:

2 large eggs
2 tablespoons milk
1/4 cup shredded cheese (cheddar or mozzarella)
2 tablespoons diced ham
1 tablespoon chopped fresh herbs (parsley or basil)
1/4 cup diced vegetables (onion or bell pepper)
2 tablespoons salsa

Cooking Instructions:

Preheat oven to 375°F. Grease a small baking dish with cooking spray.
In a medium bowl whisk together eggs and milk until combined. Stir in cheese, ham, herbs and vegetables until evenly distributed. Pour mixture into the prepared baking dish.
Bake for 20-25 minutes or until the center is set and the edges are golden brown. Let cool for 5 minutes before serving. Top with salsa before serving if desired.
