Ingredients:

60g hazelnuts, finely chopped
30g butter, melted and cooled slightly
1 egg white
2 tablespoons granulated sweetener (such as Splenda) or sugar
free sweetener of choice
1 teaspoon vanilla extract
¼ teaspoon salt
½ teaspoon baking powder

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, combine the chopped hazelnuts, melted butter, egg white, sweetener, vanilla extract, salt and baking powder until well combined.
Using a tablespoon measure or cookie scoop, drop dough onto prepared baking sheet about 2 inches apart. Bake for 12-15 minutes until golden brown. Allow to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely. Enjoy!
