Ingredients:

60g all
purpose flour
30g almond flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
60ml grapefruit juice (freshly squeezed)
30ml vegetable oil
2 tablespoons honey or agave nectar

Cooking Instructions:

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda and salt.
In a separate bowl, mix together the grapefruit juice, vegetable oil and honey or agave nectar until combined.
Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
Drop tablespoonfuls of dough onto the prepared baking sheet about 2 inches apart. Bake for 12 to 15 minutes until lightly golden brown on top and set in the middle. Allow to cool before serving.
