Ingredients:

2 cups whole wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
¼ cup honey or maple syrup
2 tablespoons olive oil or melted butter
1 cup milk or non
dairy milk of choice
½ cup raisins or other dried fruit of choice (optional)

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or oil.
In a large bowl, whisk together the flour, baking powder, baking soda and salt.
In a separate bowl, mix together the honey or maple syrup, olive oil or melted butter and milk until combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix!
Fold in the raisins or other dried fruit if using.
Pour the batter into the prepared loaf pan and bake for 35-40 minutes until golden brown and a toothpick inserted into the center comes out clean.
Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing and serving. Enjoy!
