Ingredients:

200g firm tofu, cubed
1 tablespoon vegetable oil
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
150g mushrooms, sliced
2 tablespoons soy sauce
2 tablespoons rice vinegar
1 teaspoon sesame oil
2 tablespoons chopped fresh coriander leaves (optional)

Cooking Instructions:

Heat the vegetable oil in a large skillet over medium heat. Add the cubed tofu and cook for 5 minutes until golden brown. Remove from the pan and set aside.
Add the garlic and ginger to the pan and cook for 1 minute until fragrant. Add the mushrooms and cook for 3 minutes until softened.
Return the tofu to the pan along with the soy sauce, rice vinegar, sesame oil and coriander leaves (if using). Cook for another 2 minutes until everything is heated through. Serve immediately.
