Ingredients:

1 butternut squash (about 500g) peeled and cubed
2 tablespoons olive oil
Salt and pepper to taste

Cooking Instructions:

Preheat your sous vide machine to 85°C.
Place the cubed butternut squash in a vacuum sealed bag with the olive oil, salt and pepper.
Place the bag in the preheated sous vide machine and cook for 1 hour.
Remove the bag from the sous vide machine and carefully open it.
Transfer the cooked butternut squash to a blender or food processor and blend until smooth.
Serve warm or chilled as desired.
