Ingredients:

2 cups gluten
free oat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons olive oil or melted butter
2 tablespoons honey or maple syrup
1 cup almond milk or other non
dairy milk of choice
1/2 cup rolled oats

Cooking Instructions:

Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan with oil or butter.
In a large bowl, whisk together the oat flour, baking powder, baking soda and salt.
In a separate bowl, mix together the olive oil or melted butter, honey or maple syrup and almond milk until combined.
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix!
Fold in the rolled oats until evenly distributed throughout the batter.
Pour the batter into the prepared loaf pan and spread it out evenly with a spatula. Bake for 40 minutes or until golden brown on top and a toothpick inserted into the center comes out clean. Let cool in pan for 10 minutes before transferring to a wire rack to cool completely before slicing and serving.
